WINEMAKING

Pinot Noir grapes were harvested from long-standing growers for Gray Monk within the northern and central Okanagan Valley. The Pinot Noir grapes underwent traditional red winemaking techniques, aging for 8 months in 100% French oak to add depth and complexity, and completing full malolactic fermentation to soften the mouthfeel. The result is a smooth, elegant wine that reflects both the region’s terroir and Gray Monk’s commitment to quality craftsmanship.

CHARACTERISTICS

This Pinot Noir is a refined and approachable expression of the varietal. It pours a ruby red colour in the glass with inviting aromas of ripe cherry, wild strawberry, and a hint savoury earthy notes. The palate is smooth and medium-bodied, with flavours of red plum, fresh raspberry, and a subtle touch of black tea on the back of the palate. Fine, integrated tannins provide balance, leading to a clean finish marked by red currant notes and a touch of vanilla

FOOD PAIRINGS

This Pinot Noir’s bright fruit and silky texture make it a versatile match at the table. Pair it with seared duck, a wild mushroom flatbread, or grilled trout. It also pairs well with roasted beet salad or soft cheeses like brie or taleggio, where the wine’s acidity lifts the richness of each bite.
